Fat also helps the body protect itself against many diseases. When a particular substance reaches unsafe levels in the bloodstream, the body can dilute or maintain acceptable levels of the offending substances by storing it in new fat tissue. This helps to protect vital organs, until such time as the offending substances can be metabolised and/or removed from the body through excretion or urination etc.
It is nearly impossible to remove fat completely from the diet, which surprisingly is actually a good thing as it would be unhealthy to do so. Some fatty acids are essential nutrients, meaning that they can't be produced in the body from other compounds and need to be consumed in small amounts. But there are many different types of fat and some are better than others.
